Huîtres Amélie, the brand specialising in the production and commercialisation of oysters, asked OILMOTION, with the expertise of Carles Tejedor, to create a new gastronomic proposal for Madrid Fusion, which was then presented to the public in the tasting event.
The creative team of OILMOTION considered different ingredients which would combine with oysters, looking for elements which would surprise the palate. The result of the inspiration provided by AMÉLIE was: Oysters with escabeche, green Sichuan pepper, and sesame oil bubbles.
The mix of the escabeche with the green Sichuan pepper creates a surprising touch which combines perfectly with the taste of the sea and the salt of the oyster. At the same time, one can perceive the scent of the sesame and olive oil bubbles, delighting the senses.
