On the 25th, 26th and 27th of January there occurred the XIV edition of the ‘Congrés Internacional de Gastronomia Madrid Fusión’. It was dedicated to Post Vanguard Language and New Paths of Creativity. Among more than 100 chefs from 14 countries and 70 technical demonstrations, Oilmotion, with Carles Tejedor, presented its latest inspiration: salads with cocktail shakers, an innovative and challenging experience, where the protagonists are the mix of flavours. This was inspired by one of the recent professional projects undertaken by Carles Tejedor with Speakeasy and The Academy, of the Dry Martini group.

In this edition Carles Tejedor highlights Asian products, in particular those from Japan, as well as tomatoes, a reduction of black garlic, an aerial sauce and a gelatin paste to make edible molds.
